One of the most unique restaurants in the history of Tampa Bay is about to open in the heart of St Pete.
The Huntsman, a high-end field-and-stream-to-table restaurant, is set to open at 200 Central Avenue, taking over the space once occupied by The Mill.

The Huntsman will feature a menu rich in foraged, hunted, and farmed ingredients, offering dishes like grilled antelope, Sitka deer street tacos, and elk tenderloin.
The restaurant sources its wild game and seasonal produce from ethical suppliers like Broken Arrow Ranch and Buckhead Meat.
In addition to its adventurous “guided expedition” chef-led dining experience, The Huntsman also caters to a broad palette with vegan and vegetarian options, including crushed chili cauliflower and black bean sweet potato enchiladas.
The beverage program, led by Renninger and a bar manager, will feature unique cocktails and a rare selection of first-to-Tampa wines and unique spirits.
Slated to open in late third or early fourth quarter of 2024, The Huntsman aims to hire 80 to 100 employees and plans to collaborate with Tampa Bay-based breweries and local producers.
The restaurant will offer dinner service until 9 pm on weekdays and 10 pm on weekends.
They also plan on launching a late-night menu with drink specials and small bites soon after opening.
